I always make extra chicken when I smoke or grill. I mean who doesn't? I always freeze extra chicken. Here is a quick meal that is filling and tasty for the rushed nights.

1 Large onion diced
1 Tbs oil
2 cans Hominy(15oz ea) rinsed and drained
2 cans Northern White beans(15oz ea) rinsed and drained
1 (32oz) can Low sodium chicken broth
3-4 cooked chicken breasts(or 3-4 cups mixed) diced/cubed
2 tsp cumin
2 TBS cilantro chopped
pepper to taste
1 garlic minced
1 can diced green chili OPTIONAL
Sour cream OPTIONAL
Pepperjack cheese OPTIONAL
Tortilla chips OPTIONAL
Saute onions in oil until soft. Add everything else except Optional items. Bring to boil, then simmer for about an hour. Or until you can't stand it anymore and have just got to eat it.

Very nice! I'll have to try that. We always have smoked chicken breasts bagged up in the freezer. Just pulled another one out to thaw yesterday.

Thanks! It really is a easy, quick meal. If you want to thicken use some tortilla chips or corn tortillas. We kinda like it soupy.
