Title: Sausage binder

I am looking to do my own summer sausage for the first time. Though I want to use a binder for the sausage. I'm looking to make about 15 pounds of sausage how much binder should I be using?

Hi Shishy,
Now I am looking at the reference from www.deejayssmokepit.net that I printed out a while back and it seems that the amount of binder per pound depends on what you are using as a binder.  Here is what they have listed for 5lbs of meat and you can do the math from there:

Powered Milk 1.25oz
Binding flour 1.50oz
Soybean powder 1.20oz
Corn syrup solids 1.40oz

hope this gives you a starting point to work from :)
