I've been wanting to try making summer sausage for a while now. Found some interesting casings online and figured I'd give it a shot.

8lbs GB
2lb pork
mixed with this and ready for an overnight chill in the fridge

Next day got the casings soaking in warm water while I get the stuffer ready

mixed in 2 tbsp ECA right before stuffing for a little extra "tang"
ready to stuff

stuffed 5 of these little critters. Let them setup overnight in the fridge

started at a temp of 150 for an hour(no smoke applied to these) then slowly ramped temp up to 170 and held until IT of 152. Overall cook took about 8 hours.
Gave them a cold shower to stop the cooking process

then back in the fridge overnight
all done and ready for taste test

Their website is pretty sparse. Just a brochure to look at. I placed my order over the phone.

Your welcome. They have a minimum order of 10 casings. Product arrived within a few days. No problems. Real easy to deal with just wish I can order online
I like the casings and I bet my grandkids would love those. Great idea and thanks for the post.

Thanks for the compliment. It turned out pretty good for my first try. Deer shaped casings would be pretty cool. Don't know how the antlers would turn out. Their website says they take special requests. Someone should call and see if they can do it.
I asked if they ship to Canada but sadly they don't :'(
