Got 10 lbs of venison mixed up ready for some slim jims.

Used AC Leggs #116 and Sausage Maker Teriyaki.

No time today to smoke so they get stuffed/smoked tomorrow.

Got the #116 AC stuffed and hanging.

1st roll. Both rolls are sheep casings.

In the 6 rack. PID 130-175. One in back twisted, easier to leave it.

Which casings do you prefer? I haven't yet tried sheep casings since they are expensive here and I have to buy a big lot of it.

I still prefer collagen but hard to get 15mm, so i use the sheep for the 15mm
