It's been a while since I've visited. Thought I'd share a pic of my Thanksgiving bird. Incredibly moist and smokey!
18lbs bird
24 hour brine
14 hours @230° in the box with hickory
Put in at 1am, out by 4pm, rest for an hour then chow time at 5.
Couldn't have come out any better. Make smoked turkey soup the following day. Simply unreal.
