I have been checking out some snack stick recipes and I use a tweaked Greg's Spicy stick usually. Couldn't help but notice the amount of ECA in it.  He calls for one TBS in 5 lbs. or 1/2 oz.. My calculation says its .o6 oz per lb. or .30 0z to 5 lbs. 3/8 tsp. is a little over. So a TBS is like 8-9 times more. Unless im not thinking straight.
Guess my real question is why so much and is ECA dangerous or cause problems in large amounts?


Per B&P ECA:
1.5 ÷ 25 = .06oz of ECA per pound
.06oz or 1.70 grams per pound

My package says  "Use .13 oz (2 oz) for every 25 lbs of meat."  Hab's has a write up on it on the recipe site...http://www.susanminor.org/forums/showthread.php?674-SAUSAGE-INGREDIENTS

Ok mine says 1,5 to 25 lbs or .3 to 1 lb.  According to him the 3 oz to 25 would be .12 a lb. or .6 oz for 5 lb. Ok that makes more sense. Thanks a lot SiFumar! Just wasn't adding up.  Got it now! Oh and Thanks Hab for the info!

I tend to just follow the instructions and put 1 teaspoon per pound

Now thats strange the one I just finished said 1.5 to 25 lbs. Do they make different formulas or are these suggestions? Was worried if too much would hurt the flavor or cause any thing else.

You are correct. Thanks for that catch. I incorrectly used 5 pounds to make the average conversion. The maximum amount looks alright. I'll change that asap.

The corrections were made. I just want to make a comment, to make something clearer about the ECA. There is an average amount, that generally sausage makers will use, and there is a maximum amount. The maximum amount is the amount you should not go beyond or it may alter the taste and/or texture of your sausage. So depending on your individual taste you have a range you can use.

The average amount is 1.50 - 1.80 ounces for 25 lbs. of meat; or .06 - .07 ounces per pound.

I don't know what you are reading, but I don't see anyone stating the amount LEM has written in their directions is wrong. WTFAYTA :)

Same here. But if you see the same thing on two or three different labels you got to wonder. But I'm not foolish enough to put it in because any ones recipe says so unless I ask those who know more then me. Thanks every one.
