I made some cheese for my old college roomate and he was supposed to come to my wedding, long story short, I have 5 lbs of cheese sitting here and I don't eat cheese and the wife don't like cooper. Its been vac sealed and in my crisper drawer for about 3 months. Can I take this out of the fridge and ship this to him in the mail without it being spoiled. He lives about 3 hours away and I don't feel like making the drive and I kinda would like to surprise him for Christmas.
You could get a good insulated cooler, put some dry ice in it, then a layer of material and then the cheese. Should keep it cool or a day or so.

The shipping will cost more than the cheese, but it will work. I've sent frozen goodies cross-country to Tacoma in an Omaha Steaks cooler, and they were just starting to thaw after 48 hours.
The Walmart near me sells dry ice and insulated coolers but you probably just need a insulated cooler or thick box. PapyC sent me cheese in the Gift exchange and it was fine but its been in the 40°'s around these parts.
Being where you are and him being only 3 hrs away, I would pack with just cold packs instead of dry ice. You really don't want to freeze the cheese. I can't imagine it not staying cold at this time of the year. JMHO

You should be fine shipping cheese just using cold packs or even no cooling at all. Vac sealed takes away pretty much all the issues. Think about all the cheese that those places like Hickory Farms has sitting or ships all over the place.
Never sent cheese in the mail but using common sense tells me it should be fine. I cold smoke cheese at 85-90 and then let it cool before I vac seal to put in the fridge. It hardens up just fine. So I don't see why you can't just put it in a box and mail it. In South FL the temps are in the 70's and low 80's and I would not be afraid to ship it. That is my common sense on this matter and I am going back to my corner now ;D
