Title: Question For Nepa

Rick would you recommend a ice bath after these get cooked to 150°F-152°F ??

Casings are: Description   CASING - FIBROUS, COIL, FOR SMOKING, 60 FEET LONG (47 mm)

I don't want the wrinkled look after they are done so that,s why I'm asking.

One of your measurements is incorrect.  47 mm = 1.85 inches;  60 feet = 18,288 mm

Just a copy and paste from their site Gus. Might have copied the wrong size.  :)

Think it was 60 feet long by 47MM  in Dia.

If you dont ice bath they keep on cooking.
I ice bath all my sausages.

stuff em tight  and take the IT to 153 and an ice for 2 mins, pull and let room temp.
