Kids and grandkids are coming for Christmas next week and I have been getting ready. Smoked some cheese, made my first batch of sauerkraut, got some corned beef on the go and made some belly bacon today. I found that peeling the skin after smoking was way easier than trying to remove it before.

Also spent 3 days plowing and blowing snow. Sorry no pics. But I got a feeling I will have lots of opportunity to get some pics of that.
Also got a bunch of sausage and jerky in the freezer for snacking on when we're outside sitting by the fire, consuming adult beverages and playing on the quads / sleds. Gonna be a good time. Here is a pic of one of the grandsons being pulled behind the quad last year. ;D

I followed the recipe in Charcuterie by Ruhlman. I should have sliced the cabbage thinner but I really wasn't expecting it to turn out. Also during the 2 week fermentation period the smell coming off of this was not pleasant. I expected to dump the whole works but to my surprise this tastes great.
If you want the recipe let me know and I will post it. It's pretty simple.
