I just bought a new bradley, I have owned one for years but just up graded to the 6 rack. Anyway. I was doing up some snack sticks today which usually take 7-10 hours to reach temp.
I start at 130 for 2 hours then 160 for 3 hours( with smoke), then usually 170 till they get to 155ish.
Today after the 3 hours at 160 i gave them a quick temp test(stuck a thermetor into the end of differnet sticks thorugh out hte smoker and all of them were over 152. Is it possible for them to reach temp that quick? or is my thermoter off?
(either on the smoker or the one im measuring it IT with)

Test your thermometer with the biking water test. I do it every couple of cooks or whenever to make sure they are up to par.
Bring water to boil and hold the tip in without touching the bottom of the pan. It should read 212F

That's pretty slick! I had my probe out anyway to bake the moisture out / fix so I checked it out. 212 just like you said...
