So,,,,,,,,,,,,,Im sittin here home allone, with a blizzard going on and decided to make some stuff
Spicy hot pickled sausage!!
First we take some of this stuff; bottom left, crushed cayenne pepper, pickling salt, dried minced Onion, Hungarty half sharp paprika, ground cayenne pepper, whole preppier corns and some dried minced garlic

Put that all in a pot and bring to a boil, then cover and simmer 5 min. wile we get the other stuff ready

The other stuff,,,,,,,,,,,,,,3 lb ring bologna

Sliced into bite sized hunks

Dump all the sausage in a jug and shake around till everybody is in there place

Pour in the pickling brine

Allow to cool 20 min, cover with plastic wrap and put on lid finger tight

Throw in the fridge and see ya in 5 to 7 days
That looks like it's gonna be pretty tasty.

Had all the stuff ready to make this sense you made yours but couldnt find my pickling jars till now ::)

Looks good. I'm assuming the liquid is white vinegar..... but how much? :)
If that recipe is the same one that Curt gave to me for my Christmas pickled sausage I can for sure say it is good!
Pens, I think it is a 4 to 1 vinegar to water mix.

Goes somethin like this ;D
Spicy Hot Pickled Sausage; makes 2 quarts
3 lb cooked smoked sausage, cut in bite sized pieces
4 cups white vinegar
1 cup water
2 Tbl crushed cayenne pepper
2 Tbl pickling salt
1 Tbl dried minced onion
1 Tbl Hungary half sharp paprika
1 Tbl ground cayenne pepper
1 Tbl whole black pepper corns, rounded
1 tsp dried minced garlic
Directions;
Combine the vinegar, water, salt, and spices.
Bring the mixture to a boil, stiring constantly with the vent fan on high.
Reduce heat, cover and simmer for 5 minutes.
Heat jar in HOT water wile the brine is simmering.
Place bite sized, precooked sausage into a 2 quart sterile jar, don't pack tightly.
Pour the hot vinegar mixture over the sausage, if there isn't enough, add some vinegar.
Let cool 20 min. cover with plastic wrap then secure the lid finger tight.
Place in fridge for 5 to 7 days.
Enjoy!
