Title: So I got some ring casings
Post by: Sailor on December 24, 2012, 12:05:57 PM
Been watching Rick make ring sausage for a while now and figured it was about time that I tried some of the casings.  My order came in Friday and had to wait until today to so a smoke.  Didn't have a recipe for ring Bologna so had to beg around.  Thanks to OU812 for coming to my aid with his recipe.  Going to pickle this batch using Curt's pickling recipe too.

Just stuffed and hung to dry.

Used 4 hours of Hickory and they just got finished with the smoke and they have IT 126 and will bring them to IT of 152.

Will post more pics as this experiment continues.
