well I cured 25 lbs of ham for Christmas, turned out quite well.
tender quick dry cure with brown sugar, onion powder, garlic powder and the last 14 hours soaked in apple juice, wish i would have injected it with apple juice as well..

That really turned out nice beefmann, and good choice on the sides as well. I'm a potato lover myself and dislike rice which drives my wife crazy cause she likes it. Guess it's my Idaho roots showing through.
