Heres a quick and easy one for ya;
Chop a baseball sized onion
Take a pound of bacon and chop it up like the onion, add the onion, fry till bacon is almost crispy and onion is done, drain and set aside
Beat 2 eggs, mix in 1 cup milk, 1/2 cup Bisquick, 1/4 tsp black pepper and set aside
Sherd 4 oz cheese, set aside,,,,,,,,,,I use smoked Farmers
Heat oven to 400 F
Sprinkle the onion, bacon and cheese into a 9X9 pan

Pour egg mixture into the pan,,,,,,,,,,,do not stir

Bake on middle shelf 40 to 45 min or intil knife inserted in center comes out clean

Let rest 15 min, slice N serve

I'd go with mushrooms or omit vegetation completely...but that's me.
Tim beat to it as I too was thinking mushrooms could be a good substitution for the onions.
Well we both love mushrooms so thats what is going to be devoured!! Perhaps we'll start the new year with a great breakfast!!

Im thinkin that would be a good one to cook on the grill outta the pan over indirect heat
The pan is very important to hold everything together at least at the start. It sure wouldn't hurt to give it a little smoke at some point. If you were going to grill it, you might want to experiment with deconstructing it and making it a different shape or size. However, the pie size has worked for me, and it's (of course) obscenely good.
