I posted this last year.  I just served another batch for Christmas Lunch.  I think it is worth repeating.

If the whole head puts you off a little, the cheeks can be bought and smoked for a very similar dish.

Today I was looking at a Cardenas grocery Ad and saw the heads on sale for $39.99...wow I never thought they cost so much!  I thought of your last years posting that I had read.  Came on and lo and behold you had came on and linked to it!  I want to say I really enjoyed your write up, pictures and story!  The hubs said no way in heck he would eat this...lol.  And since there are only the 2 of us here...guess I won't be making this anytime soon. :)  Thanks again for posting such a great write up!
