Well thanks to Bear 1968 and his post. I saved the next to venison hearts. So going to cure and smoke them. Also Tenpoint 5 made a post on true venison bacon. Well got two slabs in salt water and will get two more i n the next day or two. Going to cure it for bacon and see how it tastes. Going to be looking for some one to kick my a$$ if its any good since been trowing that fatty meat a way for about fifty years. Well just a teaser .. watch for the results! ;)
