Used Mesquite - I know this is a strong wood, but I wanted to try it - Family thought it had a strong smoke taste, but I loved it. I will be smoking a lot of poultry and water fowl - I breed and raise chickens - geese - and ducks. 

I want to learn to make Summer Sausage using my birds. (more toys).
