Just an FYI for anyone that lives in Ontario.
Fortino's has pork bellies on sale this week for $1.79 a pound.
Whole pork leg for $.99 a pound and 20YD's of hog casings for $4.99
Now if someone could point me to some easy bacon that uses cure #1, cold smoke, and no maple, I can see some bacon makin in the near future....
Loblaws & Zehrs has yer whole pork shoulder for $1.00 a pound this week as well for us sausage makers..
Been a lurker for a while, learned a shyte load from you guys, great forum, had a lot of good smokes, thanks a lot guys and gals!!
BTW, anyone know where i could get sheep casings in the gta without the price of buying the whole sheep and having it delivered from Australia??

Have you checked the recipe site for belly bacon recipes?  I use the basic cure(Habanero Smokers) cracked pepper and some brown sugar.  Similar to the Canadian bacon recipe of his. http://www.susanminor.org/forums/forumdisplay.php?180-Our-Time-Tested-and-Proven-Recipes
