Title: Lovely Lamb Chops
Post by: SmokinSignals on January 27, 2013, 07:44:38 PM
Okay, my first project in my new smoker was one for the ages.  Fresh lamb chops from the market, they were cut about 2 inches thick and had the bone in them.  They sort of resembled mini T- bones.  We used 4 different flavors because we had a hard time deciding on a flavor.  They are listed in order from my favorite to the least favorite, but I will say, the least favorite was still awesome.  Here we go.

1st set was rubbed with olive oil and sprinkled with salt and pepper only

2nd set was rubbed with olive oil and and rubbed down with garlic salt, we also took fresh garlic cloves and cut slits in the lamb and tucked them inside

3rd set was rubbed with olive oil and the coated with Montreal Steak seasoning made by McCormicks that you can find in most stores.  This was a little on the salty side but great.

4th set was rubbed with olive oil and then a BBQ rub was used.

Now for the settings.  I have a 6 rack DBS.  The smoker preheated to 230 degrees for 20 minutes. Mesquite wood was the weapon of choice.  We smoked/cooked the lamb in the smoker with smoke rolling the entire time for 2.5 hours.  I will tell you that the meat was as tender as a filet.  You could literally cut it with a fork.  The strong lamb flavor was non-existent.  Try it and let me know your opinions.

A video of the 4 different lamb chops going into the smoker and a turkey at the same time.  Sorry, but I do not have any pictures of the finished product, but at least I recovered this part.
