Haven't been around for quite some time, but what the heck, what can I say.
Finally got around to using some of my sausage supplies I purchased a while back and opened my shiny new stuffer and grinder. I have 30 lbs. of my buddys deer to grind up (needless to say I haven't finished the work he asked me to do, oh well) so I am making him sticks and fulfilling the rest of his order.
First batch was a 10 lb batch or Teriyaki sticks.
I used 8 lbs of lean venison and 2 lbs of freshly ground pork butt.
For the seasoning I am using sausage maker's teriyaki mix (6.5 o. if I can remember correctly, I'm not at home to look)
2 tsp or cure and I threw in 4 tbsp of teriyaki sauce for some extra tang.
I would like to mention that this was the first time I have EVER tried stick making or anything close to a sausage but I will say these things came out very tasty.

put them in and the 10 degree bitterness outside sucked the heat right out of the smoker

I went with 3 hours of pecan, this is one hour into smoking and they are taking color on quite nicely

all said and done. I could not get the smoker up to 175 outside, when night fell it was down to almost 0 and the wind was howling so I took the smoker inside to my smoke room, which unfortunately is not insulated and they finished in there. I cooked them until IT of 154-155. I will also state that a Thermo Pen works WONDERS with this.

From what it looks and tastes like, I believe I did it right!!!!!! Nice snap to them, not overly dry or moist, just right!

HAH, I don't have them anymore, dropped them off to my buddy and he doesn't have them anymore either.
