Was digging thru my spice box and found a pkg of" Bull Powder - 2% level " marked on it. Is this a binder and if so how much do I use for say 10# of meat mix??

depending on which site I am on I have seen this bull powder a few times. Sometimes there is so much bull powder floating around you really need to know where to step.
That is a old product. It used to be called Bull binder and yes it is a binder. I would guess it is to be used at a 2% level. I think I would go short if I were to try it. I have never used it. I just remember my dad talking about it.
You are right pikeman, it is Bull Binder, my fault it just looks like a powder. Maybe I should throw it.
They used to sell it up here as "bull meat binder", and it was a 2% ratio. When I tried it the sausage had a funny texture to it so I quit using it. From what I remember you had to add a lot more moisture to the meat when using it.
Nepa would know a lot more about it. If you get a chance pm him and find out what he uses now. Could be soy protien, powdered milk, or? I get confused with all that stuff :o ;D
