Side been in the rub down for 6 days now.

Rinsed and patted dry, now on rack for the pelicale.

Going to smoke in 2 diff smokers tomorrow.

Those look great Rick. Wish I could find some pork belly around here. The local butchers make their own bacon so they do not sell the bellies or want a fortune for one. but they do make good bacon.  :)

Made my first bacon this weekend- I used a #9 slabof side pork and cured it with High Mountain Buckboard cure for 11 days and smoked it per habenero's 3 day smoke recipe. used a mixture of hickory and apple pucks. It turned out excellent. I think it's probably the best bacon I have ever eaten. I apoligze for not having any pic's to share. I would like to thank this forum for the guidence on making bacon. next I will try some canadian bacon.
