I never had a problem using store bought Mozzarella in sticks.  Go for it  ;D

I used some shredded mozz in some sticks and was very careful with the temps but very little showed up in the sticks when done. So my advice is to chunk up whole mozz and not use shredded. Should work fine as lone as you keep an eye on the temps. I also used the Leggs pizza flavoring but think the taste was weak so I would use a little more spice than it says to use.
