Title: Looking for recipes for left over pulled pork

Made a butt over the weekend and have some leftovers. Other than the standard sammie, and stuff on the recipe sight, anyone have any good recipes for the leftovers.

Pulled pork nachos. Stuffed abts with pulled pork, homemade pizza with pulled pork on top.

There are a few recipes in the "Leftovers" section on the recipe site. You can also substitute pulled pork for the recipes for leftover smoked chicken and turkey.

Leftover butt!? Were you serving Vegitarians? LOL

Mexican dishes work well. I never have leftovers but if I did I think I would be tempted to include some of the unsauced pulled pork on a chef salad.

No, just me and the wife and an 8 lb pork butt. While the leftovers make great sammies, was trying to think of other uses. The Mexican dishes sound as a good idea.

Gus...we've tried pulled pork egg rolls, and like them alot!  Wrappers, pork and cold slaw(we like vinegar based), deep fried and served with sauce on side(we add cheese at times too).. (think saw on DDD).  Pork quesadillas are good too!

It is just the wife and myself here as well. Most of the time I smoke 2 butts, pull them, eat some for dinner and separate the rest in portions suitable for 3, vacuum seal and freeze all the portions for quick and easy meals later or on the road in the RV. Portions for 3 works well for 2 people to have all they want. Never had any left over yet. ;)

It turned out AWESOME.  Took it to a soup lunch at church and brought home an empty pot.  Everyone else's was still 1/2 full or more.

Are favorites are pork enchiladas, pork tacos, pork sandwiches, an pork stirfry over rice with teriyaki sauce and rooster.

Really only thing I know to do with left over pork is to mix in beans.

Shepards Pie. Substitute pulled pork & some BBQ sauce for the ground meat mixture.
