I acquired this bear meat from a friend. He said they were roast so the size and shape looks to be loins. I'm thinking sausage with a couple and I'm sending one down to SE Georgia to our resident sausage expert. Any other suggestions/recipes.

Never had it but I'd brine the He!! out of it. Not sure if I'd smoke it for a few hrs then grill it to finish or just smoke it till done
No suggestions or recipes. I am now 61 and the last time I had bear meat I was around 6 or 7 years of age. What I had was a black bear here in Florida. I remember that I liked it. I recall it was a little greasy and had a mild sweet flavor. Of course that could have been how it was prepared. It was a bear that my father killed on a hunting trip that he took me on. Back then it was legal to hunt bear and gators.

if its loin it may not be as greasy as some of the other parts, maybe bear jerky?
May be a dumb question but do you know what kinda bear it's from black, brown ????? Reason I ask is the diet it would have eat while it was alive. Wonder how gamey the meat will be???

Go with pensrock and make jerky. I did a few yrs. ago and it turned out great. I have to admit I have never tried it any other way. Piker
