Injected the Butt with Apple Juice and put in the smoker at 10pm with 4 hours of Hickory. At 5am had reached IT of 150..took out, spritzed with Apple Juice, boated and back in. IT reached 195 after 19 hours withich included 1-2 hours of dead time as I forgot about the maximum time of 9hr40min. Meat was delicious, tender. moist and easy to pull. After my first shot at a Brisket i realized that patience is the key to good results

Mo, looks great. What temp did you set your chamber heat to? And what rub?
Did you also do FTC afterwards or just let it sit openly for a while watching the temp rise?

I had the chamber set for 225 and I used a Sweet Jalapeno rub from the Carnivore Store here in my home town of Smithville, Missouri. Yes. I FTC'd for 2 hours after coming out of the smoker.
