I have used this one a couple of times with pretty good results

This is a simple recipe for bratwurst.
3 lbs. course ground pork(bostonbutt)
2 lbs. course ground veal
4 tsp. Kosher salt
1 Tbsp. black pepper
2 tsp. ground nutmeg
2 tsp. mace
1/2 to 1 cup water

Mix all ing. together and stuff in hog casings. Twist into bun size links. First twist clockwise, second twist counter clock wise, etc. Options- Use all pork, or chuck for veal, sub beer for water, add 1/2 to 1 tsp cayenne. Before stuffing make a small patty and fry and taste. Adjust salt to taste if needed.
If you from Wisconsin, they simmer in beer with onions, and ketchup. Do not boil because the skins could split. Then put on the grill. Or you could just smoke or grill them raw. I just make about 6 oz. links + or -. If you do not have a grinder buy ground pork. You can make patties and grill for Brat burgers.
I have also replaced the water with one can of beer
