Made up a nice batch of andouille sausage and wanted to share some pics. This was my first link sausage project. My son and I are having a blast with the new smoker!

Cutting up 1/2 of loin to cube

Cut the other half up in 1 inch strips for the grinder

Added seasoning and vacuum sealed for 3 days in fridge

Pulled out of fridge and ground up larger chunks

Kept the 1/4 inch meat separate while grinding larger chunks

Added in ground meat and mixed together with the 1/4 inch pieces, added powder milk for a binder

Smoked in the bradley until 150 IT tem

Pulled sausage out of smoker and immediately placed in ice bath to tighten up casings. Let sausage cool down then vacuum sealed and placed in freezer for recipes at a later date. What I wanted to point out is I have never made link sausage before this and I used the info from this site to get it done. The forum is invaluable to us first time smokers.
