Mix for 2.5 lbs of ground poke. Cure 1 added and this was ground thru my spice mill

2,5 lbs fresh ground poke

Kabanosy is done. Outside temp has dropped some so i'm going to let em hang all night in the 6 rack.

Supposed to get some low temp inland tonight so i brought the kabanosy inside.

In the picture of the stixs on the tray. That would be a good one to tell which is which since one seems to have lost more weight than the other! I am going to say that the natural sheep are on top 3 stixs and the collagen 4 stixs are on the bottom

I find sheep casings (natural) will shrink up a lot more and take on a darker smoke color.
