Title: pulled pork smoke
Post by: murrhunts on February 17, 2013, 05:29:00 PM
OK, I finally am going to do a pork butt on Monday night.  My question is how much smoke do I give it, most of the post I have seen have been 4 hours.  Is this enough?  Is too much much smoke not good?  Or will the smoke only take so much?
Thanks for any input.

By the way I have it in the refrigerator with a dry rub, and already made a thin sauce for it..

id go for 3 hours of hickory,,, or a  mix of hickory and mesquite id you  like a strong smoke... if you  want  something milder go with oak or maple

3 to 4 hours of smoke is fine. I normally do 4 hours of apple on butts.

Heat and keep the heat on until a meat temp of 180 to 190.
