Made some trial runs at some different sausages this weekend.All recipes I found on this forum.Smoked Bratwurst with 80%pork20%veal,Smoked Knackwurst 80%beef 10% veal 10% porkfat,and Bockwurst 85%pork butt 15% veal.Sorry for the cappy pics. OK Mez you need to name the winner. You can't post three sausages and not give us a quality report. Which did you like best. They all look good in their own way.

Hard to pick a favorite they are all so different.The brats came out almost exactly as what i was looking for.only thing I would change is I used butcher grind pepper instead regular need to cut it back or use regular .the knackwurst had a good flavor but The texture was a little different .I ground it with the fine plate might try it through the med plate next time.The bockwurst was surprisingly good cause I don't like onions but I sure like these sausages .don't think I would change a thing with these the came out perfect.great with some German hot mustard.Only complaint with the bockwurst was how hard it was to work with the sticky meat in the stuffing process It was challenge to load it into the Kirby cannon but once it was loaded the cannon had no problems doing it's job.Is there a secret trick to handling the sticky mess I don't know?Guess the bockwurst is my favorite brats next then knackwurst but they all are good and will be made again.
When you have a sticky blend I use thin latex gloves and make longer thinner football shaped balls. Don't make them too large of diameter as the air needs to pass around them as you push them in. Push them in a little slower so that they don't smash flat and seal up against the side walls. If you have a helper have one guy make the footballs and another person shoving them in. Then is peal the gloves off and get to stuffing. After the cannon is loaded it doesn't care what it is pushing out. It will work fine. Thanks for the description of your results. You did well.
