First time doing up summer sausage, just used on of Hi Mountains kits on this one.  It is the Jalapano one, had some that a buddy had made and it was really good so I figured I'd give it a go.  Hope it turns out ok.  Just got them in the fridge and they'll hit the smoker tomorrow evening or first thing Saturday.

Looks like a good job stuffing.

Sausage making can become addictive.

Next on the list, sausage stuffer, lol.  Stuffed these by hand, wasnt too bad.  I have a buddy that raises organic cattle and bought a side from him, so just playing with a bit of the ground beef.  Have some deer in the freezer that I'm saving up till I find something that really peaks my interest.

Yep, a stuffer is almost a necessity.
A friend near San Antonio went into Northern Tool this week and picked up one of their 5 lb models.
It rang up at $12 (not a typo).  So he grabbed some work gloves to get $15 total, then used his $5 off discount card.
They're $99.99 online, so I have no idea how the store scanner came up with $12.
But he got an outstanding deal on that one!

Lots of people here like the LEM 5 lb because its got metal gears, so more durable than plastic gear copies.

for hand stuffing the sausage looks good. At $12 he should have bought a semi load and sold them for $24 LOL.

LOL!
Shipping from TX to SD would have been double the stuffer cost!
And I've got a Cabelas Commercial 11 lb w/ motor, so I'm set.
Yea, he could have emptied the store, and sold them online for an easy profit.  But me thinks they would have gotten suspicious.  ;)
