Title: Very active Sweet Dough Starter
Post by: HSC5690 on March 01, 2013, 11:13:49 PM
I got my Starter in the mail when I got home from work tonight.  I put it in a glass container with one cup of warm (110) degree water and allowed to sit for 45 minutes in a warm location.  Then I stirred in 1 cup of King Arthur Bread Flour and 1/4 c. sugar and cover it with a plastic cap and set it in the oven with just the light on in the oven.(http://i1191.photobucket.com/albums/z472/sharonc7511/DSCF1065.jpg)(http://i1191.photobucket.com/albums/z472/sharonc7511/DSCF1066.jpg)Can't wait until morning to see what it looks like then.

That is so cool. Sonny's should be written up in the history books. After all he figured out how to ship Nitroglycerin (live bread starter)as safely as TNT(dried starter).  ;D ;D ;D

Those are some happy bubbles indeed!!! Glad to see that your starter has taken so well to it's new home.

Yes, my Husband made it into rolls and bake them this afternoon.  He has a covered dish that he is taking them to this evening.  He said that he did take pictures so I will post those when I get home from work in a little bit and hopefully still have one or two of them for me to try.  According to him he said that they weren't any good...  that they were so light and fluffy that you couldn't tell you were eating anything....  Of course he said that they were so bad that he had to eat a second one to confirm it.....  Can't wait to get home and try them.

Sonny's Sweet Bread was a big hit at the Covered Dish that my Husband went to last night.
I took the other two starters out of refrigerator last night and warmed them up.  I fed one with King Arthur Bread Flour and the other one I fed with Sams Club Bakers & Chefs Bread Flour. Let set overnight in the oven with the light on. The one with the BC was not quite as tall in the bowl as the KA but it was also farther away from the light, I checked the temp of both bowls and the BC was 2 degrees cooler that the KA. So I am sure that was the difference there.  I Stirred them both down and took back my 1 cup of starter and placed in a quart jar and left set on the counter while I finished mixing in the other ingredients into up.  When I put the lid on the Starters I could not tell any difference in the two starters, both had grown about the same amount.

I took out 2 starters last night and fed and made bread, one with Sams Club Bakers and Chefs Bread Flour and the other I used the King Arthurs Bread Flour.

My Husband finished out the breads today, but did not weight the doughs to make sure that they both weighted the same to start with, So I couldn't judge the amount of rise, The feel and the texture was a little softer and finer on the King Arthur loaf as Compared to the Sams BC.  Both had a good flavor, the BC was a little crumblier when slicing.  Cost for the King Arthur Flour here is a little under $5.00 for 5# as opposed to the BC which is a little under $9.00 for 25#.
