I know it has been consumed alot but I have spent to much time on the back of a horse. I don't know If I would eat it unless I had to. I could eat just about anything if I had to.  ;D

I like Horse meat. I ate it when I was in Europe. Sausage would be interesting!!

When I was a kid, Dad would take an injured horse away and surprise the freezer was full.  We never knew it was horse meat.  If I remember right the fat was oranger than beef.  It was good though.

Grandpa Jacque always said, horse is great its a sweet meat like moose. Moose is tasty so I would get on that wagon.

Wrap it in bacon and smoke it.
