Title: bacon?
Post by: cobra6223 on March 02, 2013, 07:06:21 PM
A friend of mine had some bacon made and didn't like the smoke content, he says it tastes like side pork, so I'm wondering myself if it isn't side pork and maybe somebody told him it was bacon. My question is if we try and put more smoke to it will it work, I know it would have to be cold smoked and I'm thinking it may be sliced also. Comments and opinions please and thank you in advance.

if it tastes like pork, im thinking it may not have been cured properly or long enough,  The smoking  is only for the smoke flavor not for curing

As mentioned above, you will not obtain the traditional "bacon" flavor by applying additional smoke, that flavor comes from the nitrites. He should ask the person who cured the bacon, as to how it was cured.  He may have use less cure so you don't get that traditional "bacon" flavor, or it is salt cured.
