Title: Beef sticks for the MIL

I sent sausages and jellies to the relatives again this year for Christmas and my mother-in-law responded as to how much she liked the beef sticks.  So...to keep her happy, I made another batch.  I follow the recipe posted by SAM3 in Feb.'12.

The spices w/ a little extra cayenne.

6 lbs. ground beef (not a bad price!) plus the spices and cure.

Stuffed into 19mm LEM smoked edible mahogany casings.  I tie them so they don't "poop" in the smoker.

After 3 hrs. pecan smoke and gradually raising the temp. until an IT of 153 F.

Bloomed for two hours, then paper bagged in the frig overnight.  Cut and ready to vac seal in resealable bags.

Ended up pretty nice.

Them sticks would go to my FIL though,,,,,,,,,,,,,,but he passed a week ago today :(

Whelp guess Im gonna have to keep them,,,,,,,,OH wait,,,,,,they aint mine  :o

Lookin at your counter top I thought I was lookin at my work space, the outlets are even in the same spots  ;D

Nice looking sticks. Where did you get your resealable bags? Do they work with a foodsaver type vac sealer?

I get the zipper bags from WestonProducts.com. where I got my sealer.  Should work with a foodsaver.
