Title: How much salmon for 50 people?

Not to be redundant, but how much salmon is needed to feed 50 people as a party appetizer?

I've read that it's 3 ounces per person, which would make it 9 pounds?

For fish 3.0 - 3.5 ozs. is considered one entrée serving. If you are looking to serve as appetizers, you may want to use a smaller portion size to calculate.

I did find one recipe site that had a poached salmon appetizer. It called for 1 pound of salmon for 8 people. That would be 2 oz each pre-cooked weight. I figure I'll go with that but build in some slack to account for the shrinkage.

This is going to be fun. I'm off to buy the salmon today and the fillets will be smoked tomorrow.
