Title: Hickory Syrup
Post by: DaveT261 on March 19, 2013, 02:37:40 PM
I am not sure what topic this falls under but here goes.  Has anyone here ever used hickory syrup for curing or used it on ribs or pork?  Many years ago I used to cut grass for a grass roots old school black man that was in his 80's that was born in the late 1800's.  He was originally from Virginia and he used to tell me stories about using it to make cure bacon and smoke ribs. Has anybody ever heard of this or tried it?

I am thinking this may have been a cultural thing done mostly in earlier times in that area.

There is a lot places to order hickory syrup on line, as far as it being a curing agent thats not possible.
This syrup is just like maple, birch syrup. It probably was used with a lot of salt to cure meat back than and it gave it a sweet taste. Just like adding brown sugar and butter to your ribs when you tin foil them during the 3-2-1 cook.

I have used hickory syrup when curing my bacon. Has a good flavor but not worth the cost to buy it.
