Post by: smokin420 on March 19, 2013, 06:07:10 PM
Hey guys I have an Auber dual probe PID. I am unsure where to place the smoker cabinet probe when i smoke snack stix. I hang my snack stix on dowels.. Just not sure where to hang probe. Thanks

just below the bottom rack, and if possible to the side as it would not be affected by the heating element

If you have enough probe cable you can come thru the top
vent and go down about 3/4 of the way down the snack
stick length or go in the side of door and drop over the dowel
rod about the same distance.

Just don't let it touch the snack sticks. That will create a false
temp reading.

If you rack them, go below the bottom rack but you will need
to rotate racks.

I hang my probe just below the hanging rack.  Gotta remember that when hanging vs laying on racks you have lots of void spaces that create a chimney effect and the heat rises.  So you are getting hotter at the top of the cabinet than at the bottom.  I use a dual probe and I can assure you that the top gets hotter than the bottom.  Right or wrong thats the way I do it  :o ;D

I hang my smoke probe level with the bottom of my meat at the lowest point. And meat probe on the same shelf in thickest part of meat.
