I think you are dead on the fat you left.
I have trimmed them all the way and it does make a butt
load of bark. :)
But what was left a good depth.
You gotta have a little fat in your diet.
The pulled pork picture just looks like a homerun and
everything you ate it on sounds like you enjoyed it.

I agree that the amount of fat you had is probably just right. You need some fat present to help keep some moisture present. The pulled pork pic looks perfect.
