Title: Pastrami Question

Started soaking two pieces of corned beef to make into pastrami and had to leave town due to a server issue.  They've been soaking in a Tupperware container in the fridge for 4 days now and I'm wondering if they're still okay make into pastrami.  The water was changed 3 or 4 times before I left and they still smell okay but dunno - whaddya yall think?

When you said you were out of town. How long were the pieces of meat sitting in the same water unchanged?

If the ingredient list on the package of corned beef included nitrites, or celery juice powder. I would say you are okay. If the corned beef were salt cured only, it would depend on the answers to the above question. If you can't remember what was on the label, go back to the store you purchased them from, and take a look at the label.

They were soaking in the water unchanged for at least 2 of those days and I can't remember what was on the label so it sounds like I'm off to the store....
