This is my second try at jerky . There is a mix of Elk and WT deer for a total of 5 lbs ..
Used High Country Three Pepper jerky seasoning and cure. Marinated for 36 hours. Wanted less time but wife put me to work in the yard.
Stay tuned for more.

just finnished pulling the rest of the jerky out of the smoker.
It took just over 12 hours at 150deg to get the last pieces dried enough to call done.
5lbs went in and 2lbs came out.
Will post pics in the morning when i get up.
