I have seen on a couple of cooking shows that true Texas brisket is done with only salt and pepper. That being said I enjoy a little more flavour and add some sugar and somtimes a lttle garlic. When the brisket is almost done I also spray down with whiskey and apple juice(50/50 mixture)

I have tried serveral rubs on brisket, but nothing beats jus plain ol' salt and pepper, with some garlic powder.

Salt and a blend of fresh ground white and black pepper corns only....  Sorry but beef IMO is just something you don't mess with.

Glad nobody said Stubbs!

I tried it last year and about chucked...  :-X

Here's my brothers rub, which works well IMHO:

1/4 C     Paprika (sweet Hungarian not the normal bitter crap)
3T         Garlic Powder
3T         Celery Salt
2T         Salt (regular table salt)
2T         Packed Brown Sugar
2T         Ground Cumin (hand grind your own, it better that way)
2T         Chili Powder
1T         Granulated Sugar
1T         Dried Ground Oregano
1T         Freshly Ground Black Pepper
1T         Freshly Ground White Pepper (I got white pepper corns from a colored mix.  Sub with Black Pepper next time)
2t         Cayenne Pepper

Glad my neighbor tried it first so he got to throw it away and I didn't have to waste my money.

The local grocery chain (a Safeway daughter company) can't keep it on the shelves. I tried it once out of curiosity and was totally grossed out.

It tastes like (dare I say it) smoked crap. Don't ask, I don't really know what that tastes like, it's just a guess :P

Aha, I should have known.  I have used their sauces before now that I see the bottle.  I will, however, stay clear of the rub.  Thanks.

I use a heavy pepper rub (Dizzy Pig Cow Lick usually) mixed with about 25% more of turbinado sugar that makes a really nice bark.

Thank you sir!  ;D

It was VERY good. The bark didn't seem to "stick" too well in a few spots but it was great!
