Ice-

Just use any kind of rub you like with beef. Can definitely cook with BB's, but plan on a lot more time, 6-7 hours at 225* would be about average for beef ribs. The biggest mistake I have made with them is undercooking them- rare is not so good with these guys! Keep a feel on the texture, try twisting bones as you get close to your time, after first couple of cooks, you'll know the "feel" you like. Lotsa pork purists around that turn up their noses at beef ribs, but I love 'em when they're cooked right!

Best of luck!

Just my thought here...I would use a simple type seasoning when it comes to BEEF...Salt , Pepper, Garlic Salt/Powder.   I would use a Italian Type Seasoning.
