Title: Jerky on the menu this weekend
Post by: Drac on March 26, 2013, 02:09:15 PM
Hi all,

Been away from the Bradley for too long and getting ready for a protein filled weekend.  Since I am doing up some butt I thought I would get the dehydrator going too.  I realized that I was low on my favorite mixes.  Since I don't have time to order any I thought I would go with a variation of muebe nuggets.  I was going to use my home-made teriyaki sauce (21oz same as a bottle), a teaspoon of cure #1, and a teaspoon of the ground pepper using sliced meat instead of nuggets.

I assume this will work?  The important part is the cure ration in the liquid?  I am doing about 3.5 lbs.

But it did bring to mind that I should be making more jerky mixes.  I am found of sweet and spicy like Sausage Source's brown sugar blend.  Anyone have any home brews along these lines?

Thanks.  Similar to what I am doing.  I make teriyaki at home since I eat a lot of Japanese and the recipe is fairly close to that.
