Hello all,
Getting a batch of everything lined up for this weekend, jerky, butts and snack sticks, bacon might be pushing it. Since I did up a batch of gumbo not to long ago I re-awakened my addiction to andouille. I have some bought blend for making it and was wondering how well it would work for snack sticks.
Anyone done this? I noticed the recipes for pepperoni sticks is different than the sausage but aren't snack sticks just thin sausages?

Sure you can. You may need to adjust the recipe for the sticks.
