Ragweed posted a recipe his Dad use to make.

Wanted to try it so I mixed up some.

Probably about 4 oz.

The rest of these were too full to put anymore in them.

4 tubes of 1.8 casings and 3 of the 1.4 casings.

Did 10 lbs. The fry meat tasted pretty good.

Followed this recipe.

Ragweed Summer Sausage

6 lbs ground Venison
4 lbs ground Pork (Bst Butt)
8.75 tsp Black Pepper
1 1/2 tsp Garlic Powder
1 1/2 tsp ground Coriander
1 tsp Thyme
3 tsp Mustard Seed
2 tsp Mustard Seed (slightly ground)
7 tsp Kosher Salt
2 tsp Cure # 1(14g)
1/2 cup water

Didn't add any cheese or jalapeno's. Wanted to see how it tasted natural.

Got hickory bellowing out of the big smoker.

When my Son's shot a deer and ask me to take it to the processor
and then ask me to pick it up and pay for it, the deer becomes mine.

We (They) shot 3 this year.

What a deal you got there Sonny.  Son's provide deer meat.  Buy you a tiller then bring their buddies over and clean the place up.  Now if you can get them to clean the house, wash the dishes and make the bed, you got it made.  ;D

3 hours of smoke (doing 4) and they are taking on some nice color.

It already passed two test. Wet finger on the spices and the fry part.

I enjoy trying different recipes and like other things . . .

The worst Summer Sausage I ever had was pretty good.

Looks very good Sonny. So when are the boys expected over. You know they are coming. I am sure they have some way of knowing what you have hanging in the smoker.
