Title: hillbilly bacon

Did some hillbilly bacon a couple weeks ago. Just found the pictures on my camera so I was not sure if I posted this or not.
Bought a 4-1/2 pound pork butt roast. Cured like you would for Habs Canadian Bacon, except I used maple sugar instead of brown sugar.

Did not get a pic going into the smoker but here are a couple coming out.

Here it is sliced up. I should have waited till it was completely cool before slicing. It wanted to fall apart some when I sliced it.
But it sure does taste good. :)

That looks great - sure will be nice with some eggs Benny or with some brown beans!

Great colour too, like Viper said.

Looks great.  Makes me wish I hadn't cut up all the butts I bought last month!
