I smoke a poke butt for Easter, Turned out REAL good. Used a Cajan dry rub and smoked with pecan. Since I started it late (6am) it didn't get finished in time for supper, so I pull it (IT was 168F) and finished it in the oven (IT 205F). As seen the bone pulled out cleanly.

Made BBQ sandwiches for supper last night and tonight. Froze the rest for a later date.
