Title: Pink Salt questions
Post by: Redneckinthecity on April 07, 2013, 01:48:14 PM
I purchased 1/2 pound of what Butcher-Packer calls "Hunters Super Cure"  It is pink and the ingredients state: Salt-Sodium Nitrite (6.25%).

My questions are these: is this the same as DQ Curing Salt and Insta Cure #1?  Is there any circumstance where this can be used in lieu of Insta Cure #2 by adding other ingredients?

Thanks.

Which makes it completely different than Cure #2.

Cure #1 =   93.75% salt, and 6.25% sodium nitrite

Cure #2=   89.75% salt, and 6.25% sodium nitrite, and 4% sodium nitrate This is not interchangeable with cure #1

Thanks for the replies.  As I understand, the sodium nitrate in Cure #2 eventually breaks down into sodium nitrite - which is what has preservative qualities.

I've been thinking of trying to make breseaola, so I'll be ordering some cure #2 before proceeding.

Appreciate the help.
